pickled onion recipe below if you want to make you pickled onion recipe below if you want to make your own: 

* 1 large red onion, peeled and thinly sliced
* 1 jalapeños, sliced 
* 1 cup apple cider vinegar (I used white vinegar this time) 
* 1 cup water
* 1 teaspoon fine sea salt
* 2 tablespoons of sweetener (such as maple syrup, honey, sugar, etc.)

INSTRUCTIONS
* Heat the vinegar mixture. In a small saucepan, stir together the vinegar, water, salt and your desired amount of sweetener. Cook over medium heat until the mixture reaches a simmer.

* Place the thinly-sliced onions in a mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture.
* Marinate. Let the onions marinate for 30 minutes. (You may need to press the onions down with a spoon so that they are all submerged under the vinegar mixture.)
* Serve immediately or refrigerate the onions in a sealed container for up to 2 weeks.

my son and i have grown up together in so many way my son and i have grown up together in so many ways.

he’s my firstborn. and in raising him he ended up raising me too. he taught me patience. he taught me that life doesn’t have to be figured out all at once. that it’s okay to find yourself along the way.

watching him take the field tonight as a varsity sophomore, all i could think about was how much he’s grown in such a short period of time. 

we’re so proud of him. this is just the beginning for him. the sky is the limit, baby! #78

our first week down and as the kids find their rhy our first week down and as the kids find their rhythm this year, i’m finding mine too.

getting ready and showing up for yourself matters. It doesn’t have to be complicated but it does have to be intentional. Even if it’s just 10 minutes for ourselves.
